The central horizon seems to be a common problem (for me anyway) in pano shots, probably because the camera has been levelled to facilitate stitching. Being able to rotate the camera vertically around the exit pupil (or is it nodal point) would probably help. It's not so much of a problem where the horizon isn't flat.
It doesn't worry me as much as it does some.
